There is only the tasting menu, and it changes fundamentally each season. Approach with curiosity rather than expectation. Some courses are meant to be eaten with your hands; others arrive as puzzles. The edible stones and the clay-baked preparations are signatures that reappear in different forms.

Best Time

Book well in advance — Mugaritz operates on a seasonal calendar and closes for several months each winter for research and development. Dinner is the full experience. The drive through the Basque countryside to reach it is a deliberate prologue.

Know Before You Go

Located in the hills outside Errenteria, roughly 20 minutes from San Sebastián by car. You will need a taxi or car. Mugaritz has burned down twice and been rebuilt both times — that persistence tells you everything about Aduriz's commitment. The kitchen closes for months each year to rethink the entire menu.
