One of Spain's greatest chefs operating at an altitude that few kitchens in the world can sustain. The tasting menu at Martín Berasategui is a masterwork of precision, built on classical technique and Basque soul — each course arrives as though it were the only dish the kitchen prepared that day. Three Michelin stars in the quiet suburb of Lasarte-Oria, where the absence of spectacle allows the cooking to speak without raising its voice.

Must Try

The full tasting menu — there is no abbreviated version that makes sense here. The lobster salad with citrus cream has been a benchmark dish for years. The foie gras preparations are among the finest in Europe. Let the sommelier guide the pairing; the cellar is extraordinary.

Best Time

Book a month ahead minimum, two months for weekend dinners. Lunch is the preferred seating for many regulars — the light in the dining room and the view of the garden are part of the composition. Wednesday through Sunday.

Know Before You Go

Located in Lasarte-Oria, a 15-minute drive southwest of San Sebastián proper. A taxi is the practical choice. Berasategui holds more Michelin stars across his restaurant group than almost any living chef, but this is the flagship where the concentration is highest. The garden and kitchen garden are visible from the dining room. Jacket not required but the room tends toward elegant.
