Ali Güngörmüs grew up in a village in eastern Anatolia called Pageou and named his Munich restaurant after it — a declaration that the food on your plate carries the memory of a specific landscape even when the technique is contemporary European. The kitchen builds dishes from premium ingredients treated with simplicity that conceals precision: a piece of fish handled so carefully it seems to have cooked itself, vegetables that taste more intensely of themselves than seems reasonable, and flavours that reference Turkish and Middle Eastern traditions without reducing them to exoticism. The dining room in the Funf Hofen complex is modern and welcoming, the kind of space where the food arrives without pretension and leaves an impression that lasts longer than the evening.
