In the shadow of the Frauenkirche, a wood-panelled room has been serving Franconian bratwurst with the single-minded devotion of a kitchen that decided one thing done perfectly is enough. The sausages are small, made to the Nuremberg recipe, grilled over beechwood, and served six or twelve at a time on a pewter plate with sauerkraut and potato salad. The dark wood interior, the long communal tables, the beer from Augustiner or Tucher — everything serves the sausage and the sausage justifies everything. This is not a restaurant trying to be more than it is. It is a restaurant that understood exactly what it was and committed to it with the confidence that comes from being right. The Frauenplatz location, steps from the cathedral, is the bonus the food does not need.

Nurnberger Bratwurst — twelve, on the pewter plate, with sauerkraut and potato salad. This is not a negotiation. Horseradish on the side. Augustiner Helles from the tap. A second round of six if the first convinced you, and it will. Do not order anything that is not a sausage on the first visit.
Lunch for a calmer room and the smell of beechwood smoke before the tourist crowd arrives. Dinner fills the communal tables and the atmosphere thickens with Augustiner and conversation. Walk-in is possible at lunch; dinner benefits from a reservation.
Frauenplatz 9, directly at the Frauenkirche. Marienplatz U-Bahn/S-Bahn, 3 minutes on foot. 6 sausages EUR 10-12, 12 sausages EUR 16-18. Walk-in at lunch, reservations helpful for dinner. Communal tables — you will share. The beechwood grill is visible and the smell guides you from the street. Cash and cards.
