Four generations of the Masuelli family have operated this trattoria since 1921 with a devotion to Milanese cooking that borders on the ecclesiastical. The risotto alla milanese arrives in a copper pan, golden and quivering, each grain coated in saffron butter with the precision of a kitchen that still treats it as a sacrament. The ossobuco is cross-cut veal shank braised until the marrow surrenders, served with gremolata that cuts the richness with lemon and parsley. In winter, the cassoeula appears — the great Milanese stew of pork and savoy cabbage that once fed working families and now feeds nostalgic ones. The dining room is wood-panelled, the service unhurried, and the clientele largely Milanese.
