Graze. Move from stall to stall — croquetas at one, vermouth at another, oysters at a third. Stand at the counters rather than claiming a table. The Iberian ham stands are the best value. Pair with Spanish wine or vermouth. Budget 30-50 euros per person for a full tasting tour.
Thursday or Friday evening (7-9pm) for the atmosphere — locals mix with tourists and the energy is genuine. Avoid Saturday afternoon when it becomes uncomfortably crowded. Sunday morning is quieter but some stalls are closed.
