The tarta de queso. Full stop. A thick slice of the burnt Basque cheesecake that started the global trend — still the definitive version, creamy and trembling and properly caramelized on top. After that, the pintxos are traditional and solid: anchovies, croquetas, tortilla. But you came for the cheesecake.

Best Time

Afternoon between 4pm and 6pm if you want cheesecake without fighting through the dinner pintxos crowd. Multiple cheesecakes are baked daily but they do sell out. Lunch and dinner services are busy with a full pintxos operation.

Know Before You Go

La Viña has been serving this cheesecake since the 1990s, long before Instagram made it globally famous. The recipe is deceptively simple — cream cheese, sugar, eggs, cream, flour, baked at high heat. Every version you've had elsewhere is a copy of this one. The bar itself is a perfectly good traditional pintxos bar on its own merits. They will give you the recipe if you ask — they're famously generous about it.
