A cornerstone of Calle Estafeta since 1959, run by the same family for the better part of four decades, with cured hams hanging thick from the ceiling and a counter that reads like a catalogue of Navarran tradition. It sits directly on the encierro route, which means for one week each July the whole world funnels past its door — but the rest of the year it is simply one of the most reliable pintxo bars in the old town, unhurried and confident in what it does.

Anything built around the hanging jamón, and whatever hot pintxo is coming off the plancha. The Navarran classics — piquillo peppers, cured meats, a good tortilla — are the reason to be here.
Midday from 1pm when the counter is freshly stocked, or early evening before the txikiteo crowd fills Estafeta. During San Fermín this is prime encierro-route frontage and impossibly busy.
On the running-of-the-bulls route, so the address itself is a landmark. Long hours (roughly 11am to past midnight) make it a dependable anchor at almost any point in a crawl. Cash is welcome and the family run it with old-school warmth.
