Diego Cabrera's flagship on Calle de Echegaray — a World's 50 Best Bars fixture and the bar that put Madrid on the international cocktail map. The room is long, colourful, and deliberately theatrical: drinks arrive in playful vessels, presentations involve smoke and fire, and the effect is of a bar that decided seriousness and spectacle are not opposites. Behind the showmanship, the liquid is exceptional. Cabrera trained in Buenos Aires and London before returning to build a programme where the Chipotle Chilango — smoky, layered, theatrical — is signature for reasons beyond its appearance.
