Fernando del Diego opened this bar in 1992 and trained a generation of Madrid bartenders in the discipline of doing things properly. The room is small, the stools occupied by people who understand that a well-made Martini is the product of decisions most bars get wrong. The menu leans classical: Manhattans, Daiquiris, Gimlets, built with proper technique and served without commentary. No theme, no gimmick, no speakeasy entrance — just a bar where a person who knows cocktails makes them for people who want to drink them. Madrid has flashier options. None are more reliable.
