A single-origin pour-over is where Fabrica shines — the Ethiopian lots (when running) are particularly clean and floral. The flat white made with their house blend is the reliable entry point if you want milk. For espresso, their medium-light roast rewards attention in a way that dark Portuguese bica does not attempt. Buy a bag of the house blend to take home — Fabrica's roasts travel well and make an excellent Lisbon souvenir for anyone who cares about coffee.

Best Time

Mid-morning on weekdays, when the Baixa foot traffic provides atmosphere without overwhelming the space. The roasting schedule varies but mornings often catch the tail end of a roast, filling the cafe with that particular green-to-brown transformation smell that coffee people live for.

Know Before You Go

Multiple locations across Lisbon, but the original on Rua das Portas de Santo Antao near Rossio is the one with the roasting operation and the most character. Fabrica has earned its reputation locally — this is where Lisboetas who have discovered specialty coffee go, which gives it a different energy than the Scandinavian imports. The staff are knowledgeable without being precious. If you visit only one specialty coffee spot in Lisbon, the argument between Fabrica and Copenhagen Coffee Lab is a good one to have.
