Simone Caporale (formerly of The Artesian at The Langham, London) and Marc Alvarez opened Sips in the Eixample with a concept that treats cocktail drinking as a progression: you move through the space from the front bar (quick, standing, aperitivo-style drinks) to the back room (seated, more considered cocktails), echoing the Tayēr + Elementary dual format. The drinks are technically extraordinary — Caporale's London pedigree shows in every glass — and the Eixample location grounds the experience in Barcelona rather than importing London wholesale. Named World's Best Bar in 2023, currently ranked number three.
