Giorgio Pinchiorri built the collection over decades with the obsessiveness of a man who understood that great wine requires patience, and the cellar now functions as a living archive of European winemaking. Courses arrive with the precision of haute cuisine, but the Tuscan root system is never severed — a pigeon might carry the memory of the Valdichiana, a pasta the geometry of hand-rolled pici.
