Further up Licenciado Poza than the crush near Gran Vía, Ziripot keeps to the traditional end of the Basque pintxo — cured, fried, and built on bread rather than reinvented on a plate. The crowd is neighbourhood regulars, the pace is unhurried, and the counter rewards the eater who knows what they want. It is Indautxu doing the classics without apology.
