Since 1905, Figlmüller has been pounding veal cutlets to impossible thinness and frying them to golden perfection. The schnitzel literally hangs off the plate—it's become the standard by which all others are judged. Four generations of the family have guarded the recipe and the technique: hand-pounded, coated in fine breadcrumbs, fried in clarified butter until shatteringly crisp. The space is traditional, bustling, and tourist-heavy, but the quality remains consistent. Multiple locations now exist, but the original Wollzeile spot has the most atmosphere.

The schnitzel. Obviously. It comes with potato salad and lingonberries. Beer or Grüner Veltliner to drink. That's the entire menu and it's perfect.
Lunch is busy but moves quickly. Dinner reservations smart. Avoid peak tourist hours (1-2pm) if possible. Sunday is marginally quieter.
Expect a wait without reservations. Service is efficient, not warm. It's touristy but legitimately good. Cash preferred. The schnitzel is genuinely enormous—one per person is plenty.
