Chef Quique Dacosta's Valencia outpost serves a tasting menu that's creative without being aggressive about it, rooted in local ingredients but willing to travel. The space is modern but warm, service is professional without the fine-dining stiffness, and the cooking shows skill and restraint. It's where you go for a special meal that won't consume your entire budget or require studying the menu like homework. A very competent second-tier fine-dining experience, which is not a criticism.
