Manifattura builds its entire cocktail programme on a single constraint: every spirit must be Italian. In a country that invented the negroni, the Americano, and the spritz, this is less limitation than liberation. The marble-topped bar occupies a handsome room near Santa Maria Novella, and the bartenders work through a vocabulary of Italian amari, vermouths, grappas, and gins that most visitors have never encountered. The negroni variations alone — built with different amari, different vermouths, different gins from Piedmont to Sicily — could occupy an evening of serious research.
