The whale theme is announced by the name — walvis is Flemish for whale — and carried through the space with playful restraint rather than maritime overkill. Exposed brick walls and industrial fixtures create a framework for what is essentially Dansaert's late-night living room: a place where creative cocktails meet DJ sets, where the crowd arrives after dinner and stays until the small hours. The drinks menu is inventive without being gimmicky, grounded in solid technique but willing to experiment with seasonal ingredients and unexpected combinations. When the music picks up around eleven, Walvis transforms from cocktail bar to something approaching a very civilized party.

Their house Espresso Martini is one of the better versions in Brussels — properly shaken, not too sweet. The seasonal cocktail menu rotates monthly and usually features something built around Belgian genever. A Walvis Spritz on the terrace works for earlier hours.
Late on Friday or Saturday, from eleven onward, when the DJ is in full flow and the Dansaert crowd has migrated from dinner tables. For conversation over cocktails rather than dancing, Thursday at nine strikes the balance.
